Oats Two Ways (Part 1)

I’ve had this huge container of Quaker Oats in my food cabinet forever so I finally decided to use it all by making two different oat desserts: no bake cookies and granola! I sold the no bake cookies at my school for another Key Club bake sale, which this time raised money for human trafficking victims (through UNCHAINED)! I made what I call an “almond joy” granola to eat for breakfast when I’m running late for school in the morning, and to pair with some fresh berries and greek yogurt on the weekends!

First, I made the chocolate peanut butter no bake cookies and used the ingredients shown below!:

  • 3 cups Quaker Oats
  • 1/2 cup milk
  • 3/4 cup peanut butter
  • 1/4 cup cocoa powder
  • 1/4 cup nutella
  • 1 stick butter
  • 1 tbsp honey
  • 2 cups sugar

First, in a saucepan melt the butter and sugar together. Then mix in the cocoa powder, milk and honey in.

Once that is all combined, add in the peanut butter and Nutella until it is all melted and mixed together completely. Remember to place plastic wrap on your measuring cup when taking out the peanut butter and Nutella to make clean up easier!

Place the warmed chocolate mixture into a large bowl and then add in all the oats. Use two large spoons to combine them altogether.

Once it is all combined, take a mini ice cream scoop to scoop out cookies onto a parchment paper lined pan.

Flatten each of the scooped out cookies out and then place them in the fridge for at least 30 minutes before removing them to enjoy! This was not only an amazing bake sale item, but also the perfect and easy way to satisfy your cookie craving!
